Grilled chicken, ricotta, mozzarella and broccoli make this twist on “Holiday Pizza” a “personal” favorite at our house! It’s also a great way to take leftover broccoli and chicken and make it into a Friday night treat.
Prep time: 5 minutes
Cook time: 10-15 minutes
1 whole Naan Bread
3 tablespoons ricotta cheese
4 tablespoons shredded mozzarella
1-2 oz left over grilled chicken
Extra Virgin Olive Oil Spray
Crushed red pepper
Preheat oven to 350F
Lightly mist both sides of your Naan with EVOO spray. Sprinkle both sides with Italian seasoning and garlic salt. Take three tablespoons of ricotta and distribute randomly on naan, pressing until fairly flat. Sprinkle mozzarella on remaining “bare” spots. Layer with broccoli and grilled chicken. Top with a little freshly chopped basil and crushed red pepper if you choose. Bake for about 10 minutes or until mozzarella is melted and ricotta is hot and bubbly. Enjoy!
***This recipe is for one personal naan pizza which could be cut in half to serve two or doubled/tripled to serve a family. I usually make it “on the fly” but measured this time for nutritional information. Don’t be afraid to do your own twist! Perhaps adding spinach to the ricotta and fresh cut tomatoes.
