3 large avocados
3 large cans of solid white albacore tuna
1 small red pepper, chopped
1 small yellow pepper, chopped
1 small tomato, diced
1 jalapeño, de-seeded and diced
1/2-1 cup shredded carrots
1/2-1 cup shredded broccolini mix
1/2 cup chopped fresh cilantro
2 TBSP extra virgin olive oil
2 TBSP lime juice
Pinch of smoked paprika
Crushed red pepper to taste
Black pepper to taste
Himalayan pink sea salt to taste
Mash Avocados in large mixing bowl. Add in olive oil and lemon. Mix well. Add in remaining ingredients and combine well. Top spinach tortilla with spring lettuces and tuna mixture. Enjoy!
Other options: Swap out tortilla for bib lettuce or eat on its own. Don’t be afraid to play and mix in other veggies such as cucumber, etc.
