6 turkey sausage links, sliced into bite sized pieces
2 chicken breast cut into bite sized pieces
2 cups cooked salad shrimp, tailed removed and deveined
2 summer squash, chopped into bite sized pieces
1 TBSP minced Garlic
Lemon Pepper seasoning
Cajun Blend; equal parts…
Or…just by a cajun spice blend if you don’t have time for all that.
Season chicken well and cook with sausage over medium heat until well done.
Remove and drain.
Add a splash of EVOO to pan. Saute your garlic for about a minute prior to adding in veggies. Season veggies with lemon pepper seasoning and heat until soft, but not mushy. Add meat back in along with your shrimp that has also been seasoned with your cajun blend. Heat for an additional 3-5 minutes, stirring frequently to combine.
Play with your veggie mixture and add in more variety if you would like. Mushrooms, asparagus, zucchini are all great ideas! Topping with avocado or serving over cauliflower rice is another great variation!
