Inspired by my favorite summer drink and summer
itself, this one is a crowd pleaser!

Ingredients
5 lbs boneless skinless chicken breasts, fillet
3/4 cup lime juice
3/4 cup fresh chopped mint
1/2 cup light rum
2 TBSP extra virgin olive oil
3 ounces mint syrup (sometimes found with coffee and tea/ prepared drink mixes)
1 TBSP coarse kosher salt
3 fresh limes
Fresh mint sprigs for garnish
Instructions
Whisk together lime juice, chopped mint, rum, evoo, mint syrup and kosher salt in a bowl. Place chicken breasts in a resealable plastic blag. Pour marinade over chicken and seal bag. Work the chicken in the bag a little to evenly distribute the marinade. Chill in refrigerator for 4 hours.
Heat grill to medium heat. Cook about 10-15 minutes each side or until chicken is cooked through. Transfer chicken to plate and cover with aluminum foil, allowing it to rest 5 minutes prior to cutting.
I served with a side of coconut rice and grilled summer squash. It would also go great with grilled pineapple or a fruit salsa.
