Inspired by summer with a dash of spice, you’ll be putting this recipe on repeat all summer long!
Calories: 247 kcal
Prep time: 15 minutes
Cook time: 30 minutes
5 pounds boneless skinless chicken breast, fillet
2/3 cup fresh orange juice
1 cup lime juice
1/2 cup extra virgin olive oil
1/2 cup chopped fresh cilantro
4 garlic cloves
2 tsp chili powder
2 tsp crushed red pepper flakes
2 tsp smoked paprika
1 tsp salt
1 pack of small tortilla wraps
Whisk everything but chicken in a bowl. Place chicken breasts in a resealable plastic bag, pour marinade over the chicken. After closing the bag, work the chicken a little to evenly distribute marinade.
Preheat grill to medium heat. Grill chicken breasts about 10-15 minutes each side or until cooked through.
Transfer to a plate and cover with aluminum foil allowing the chicken to rest for 5 minutes. Cut chicken into diagonal slices and layer tortilla with chicken and watermelon salsa, enjoy!
For the watermelon salsa…
1/3 C Cilantro, chopped
2 TBSP Fresh Lime Juice
Salt and Pepper to taste
The following ingredients are all after being individually chopped/or pulsed in food processor (preferred method.)
2 C Watermelon
1 C Tomatoes
1 C Red Onion
1/4 C Jalapeno, seeded and deveined
After chopping/pulsing all above ingredients, combine by gently folding together. Add in cilantro, lime juice, and salt and pepper. Refrigerate for at least one hour to allow all of the flavors to meld together.
TIP: Drain watermelon in colander while chopping remaining ingredients. Stores well for a few days in the refrigerator, however you want to drain the juice daily.
This recipe makes about a medium size container.
