2 cups of cooked quiona
2 cups of beans of your choice (northern, black, red, or kidney beans. I used a combo of all)
1/2 cup of peppers and onions that have been cooked
1/2 teaspoon cumin
1/4 teaspoon chili powder
1/4 teaspoon paprika
Salt and pepper to taste
Place beans, peppers, onions and spices in food processor or blender. Blend until only small pieces of beans remain. Scrape mixture out and place in bowl with quiona. Mix until fully combined.
Pat into burgers and freeze at least 15 minutes.
Bake on parchment paper lined baking sheet at 375 degrees for 10 minutes. Then flip and bake another 10 minutes.
Avocado lime dressing
1 1/2 avocados
Juice from 1 lime
1/4 cup water (add more for thinner consistency)
1/2 teaspoon cumin
1/2 teaspoon fresh minced garlic
Salt and pepper to taste
Add all ingredients to blender or food processor and mix until smooth. Start with only 1/4 cup of water then drizzle in more to reach desired consistency.
Place super greens mixture on plate top with dressing and burger. Enjoy!
