Sausage, Spinach, and Feta Egg Casserole

Serves: 8

1 tsp evoo
1/2 very finely chopped onions
12 oz ground turkey sausage
5 oz baby spinach
8 eggs
1/2 skim milk
1 cup feta

Salt and Pepper to taste

Preheat oven to 325 Fahrenheit.
Spray an 8x12 with non-stick cooking spray.

In a large skillet, heat olive oil over medium- high heat and saute onions until they start to brown. Usually takes about 5 minutes.

Reduce heat to medium and add in sausage. Cook until its mostly browned.

Add in spinach and saute the last couple minutes until it begins to wilt.

Remove from heat and allow to cool.

In a large mixing bowl, whisk eggs, milk, salt and pepper.

Add in sausage/spinach mixture and the feta.

Stir well to combine.

Pour the mixture into your casserole dish

Bake for 40 minutes.

Allow to cool for about 10 minutes prior to serving.
