Spaghetti squash
2lb shrimp- pre-cooked, deveined and tails removed
1 pack turkey kielbasa
Celery- chopped
Green pepper- diced
I3.5 oz can of diced tomatoes with chili peppers
TBSP Minced garlic
Cajun seasoning
Extra virgin olive oil
Cut spaghetti squash in half- but not length wise. Cutting it this way will give you longer more spaghetti like strands. Brush with EVOO and season to taste. Roast in oven on 400 for 45 minutes to an hour, or until tender.
Sauté kielbasa on each side in a large frying pan or wok until brown, and skin is starting to blister. Set kielbasa aside. Sauté celery, green pepper and garlic in about a tbsp of evoo. Add back in kielbasa, shrimp, and diced tomatoes. Add Cajun seasoning to taste. Cook until shrimp is warmed through, stirring frequently.
Top spaghetti squash with shrimp/kielbasa mixture and enjoy!
