Ingredients:
10 eggs
1 lb ham steak (Wanna cut even more calories and fat? Kunzler and Jennie O make a turkey ham made from smoked turkey thigh- amazing!)
2 medium sweet potatoes
1 jalapeno pepper
1 medium sweet onion
1 golden delicious apple
S & P to taste
Instructions:
Preheat oven to 425 (F). Hard boil your eggs. Line baking tray with foil- mist with non-stick cooking spray. Wash and dice sweet potatoes. Place sweet potatoes on baking sheet and mist lightly with EVOO spray, seasoning with fresh ground pink Himalayan sea salt and black pepper. Bake for about 20 minutes. While the potatoes are baking, dice your onion, red peppers, jalapeños (remove seeds to get rid of some of the heat). Saute over medium heat until soft. Remove pan from heat.Dice apple, add it and the sweet potatoes to pan and stir to combine. Season to taste. Enjoy with a side of ham, cooked or not cooked and hardboiled eggs.
