Taco Breakfast Bowl

A great breakfast option packed with flavor!
Scrambled eggs and taco meat with a side of hash browns and salsa.
A yummy treat your family will be asking you to make over and over again!

Ingredients:

For the taco meat:
1 lb ground turkey
1/2 cup tomato sauce
1 tsp chili powder
1 tsp cumin
1 tsp smoked paprika
1 tsp garlic powder
Salt and pepper to taste


For the eggs:

8 eggs
1/4 cup skim milk (optional)
Cooking spray
S & P to taste

For the hash browns:

3 cups hash browns
2 TBSP olive oil
2 Roma tomatoes

On the side:

Fresh salsa
Instructions:

For the taco meat:

Brown the turkey burger in a large skillet over medium-high heat. Drain. Add 1/2 cup tomato sauce, along with spices. Stir to combine and cook an additional 5 minutes. Remove from heat and set aside.

For the hash browns:

Heat a large skillet with olive oil over medium heat. Add in hash browns, cooking for about 5 minutes. Flip and continue heating for about another 5-8 minutes. Add additional oil as needed and leave in a little longer if you would prefer them a little more crispy. Remove from heat, dice 2 tomatoes and mix in with hash browns.

For the eggs:

Scramble eggs beating in milk. Heat over medium heat and be sure not to over cook.

Serve with a side of salsa and enjoy!
