Watermelon Salsa

1/3 C Cilantro, chopped
2 TBSP Fresh Lime Juice
Salt and Pepper to taste

The following ingredients are all after being individually chopped/or pulsed in food processor (preferred method.)

2 C Watermelon
1 C Cucumber
1 C Tomatoes
1 C Red Onion
1/4 C Jalapeno, seeded and deveined



After chopping/pulsing all above ingredients, combine by gently folding together. Add in cilantro, lime juice, and salt and pepper. Refrigerate for at least one hour to allow all of the flavors to meld together.

TIP: Drain watermelon in colander while chopping remaining ingredients. Stores well for a few days in the refrigerator, however you want to drain the juice daily.

This recipe makes about a medium size Tupperware container.
