Zucchini Turkey Burger With Lemon Yogurt Sauce

Serves 5


1lb turkey burger
1 large zucchini, grated
1 egg
2 tbsp fresh chopped parsley
2 tbsp fresh chopped mint
1 minced garlic clove
1/2 tsp cayenne pepper
1/2 ts ground cumin

Sea salt and black pepper to taste

Lemon Yogurt Sauce:

1 7oz container of plain greek yogurt
The zest and juice of one lemon
1 tbsp extra virgin olive oil

Sea salt and black pepper to taste


In a small bowl combine all sauce ingredients, mix well and set aside.

In a large bowl combine all burger ingredients

After spraying hands with evoo spray to avoid sticking, shape into burgers.

Heat olive oil over medium-high heat in a large skillet.

Cook burgers in small batches about 7 minutes each side, or until golden brown.

Serve with warm yogurt lemon sauce on the side.
