3 cups quick cook oats
2/3 cup brown sugar
1/3 cup coconut flour
1 tsp ground ginger
2 tsp baking powder
1 tsp salt
2 eggs
2 cups milk
1/4 cup extra virgin olive oil
1 tsp vanilla
1 cup each:
Blueberries
Blackberries
Strawberries
Raspberries
Preheat oven to 350 F
Lightly grease 9x13” glass baking dish
Cut up fruit to desired size
Combine all ingredients except berries
Gently fold in berries
Bake at 350 for 35-45 minutes or until the middle is set.
Hopefully you don’t run into every snack food possible like I did when trying to make this dish...but...if you go for the eggs just to realize there is only one left- a quarter cup of apple sauce per one egg works just fine. Also, if you’re out of baking powder like I was- you can substitute with a tsp of cream of tartar and 1 tsp of baking soda per tsp of baking powder.
Awesome served with warm, cool, with milk or alone!
