Rainy (or snowy) Day Chicken Soup

With all of the rain we’ve had recently, I thought it would be nice to prepare a soup to take the chill out of our bones- going from summer to cold and damp so quickly. I picked up a chicken yesterday, and grabbed random vegetables while wondering the grocery store today. Added in some spices I figured most people tend to keep on hand, and voila! Delicious, homemade, clean chicken veggie soup!

Ingredients:

1 rotisserie chicken, cut into bite size pieces (save drippings for broth)
3 medium size red potatoes, diced
3 carrots; peeled and chopped
3 stalks of celery; chopped
1 16 oz. bag of frozen peas
1 15.5 oz can cannellini beans; drained and rinsed
1 49.5 oz chicken broth
1/4 cup dried parsley
2 TBSP minced onion flakes
1 TBSP crushed red pepper flakes
Black pepper to taste


How to:

Add diced potatoes, carrots, celery, and frozen peas to pot

Add chicken broth and drippings from rotisserie chicken

Bring pot to a boil for a few minutes until the potatoes and carrots begin to soften

Reduce to simmer and add in chicken, beans, and seasonings

Simmer on low for a half hour stirring occasionally
