3lb beef chuck roast
1 bunch of cilantro
6 cloves garlic
1 tsp oregano
1/4 cup dried onion
1 cup beef broth
2 TBSP tomato paste
16 oz jar of picante sauce
1 TBSP chili powder
1 tsp cumin
Place roast in instant pot or crock pot.
Mix all remaining ingredients in a bowl, reserving 1/2 jar of picante sauce.
Pour broth mixture over roast.
Cook either in instant pot on beef stew mode, or in crockpot on low for 6 hours or until done.
Remove roast and shred or chop.
Pour remaining picante sauce over beef with a laddle or two of the broth from instant pot.
Top with chopped cilantro and mix well.
Serve on soft tortillas or on a bibb of lettuce.
