This recipe definitely was one of those grab a little of this, grab a little of that, bam! “It just came together” type of recipes and it just so happened to be awesome sauce!
If you like things a little on the spicy side, you won’t be disappointed!

Ingredients:
2.5 lb lean ground chicken breast
1 15.5 oz can of low sodium black beans
1 10 oz can of rotel diced tomatoes and green chilies
2-3 deseeded, chopped jalapenos
Small red onion, chopped fine
A decent splash of Red wine vinegar
1 TBSP minced garlic
1 TBSP cumin
1 TBSP coriander
½ TBSP chili powder
Juice of one lime
1 bunch of fresh chopped cilantro
Salt and pepper to taste
Sweet potato rice- store bought or riced in food processor and then seasoned and
sauteed. Same for cauliflower rice.
Saute garlic, jalapeno and onion in a splash of evoo. Add in ground chicken breast. As
the ground chicken begins to brown throw in a splash of red wine vinegar. Add in your
cumin, coriander, chili powder. When ground chicken is cooked through, gently fold in
your black beans, rotel tomatoes and chilies, juice of one lime and cilantro. Allow to
cook for just a few more minutes.
Layer cauliflower rice, sweet potato rice and chicken mixture or, mix it all up and enjoy
as a bowl.

Riced Sweet Potato 3oz
Riced Cauliflower 5oz
To make more low carb friendly, reduce or omit sweet potato rice.
