2 large sweet potatoes sliced into 1/4 inch round slices
1 bag of mini sweet bell peppers, sliced in half
1 lb turkey burger
1/2 cup of black beans
Sprinkle of cheddar jack
1/4 cup ricotta or queso fresco
Serrano or jalapeno peppers (optional)
Fresh salsa (optional)
Roast sweet potatoes and mini peppers in either air fryer (makes them nice and crispy) or on sheet pan in the oven.
Meanwhile, brow and season turkey burger to taste with taco seasoning in large skillet (preferably low sodium)
Layer sweet potatoes, peppers, turkey burger and black beans in casserole dish. Sprinkle with cheddar/colby jack. Mix ricotta with a little taco seasoning and drop in small spoonfuls across top of casserole if using ricotta. If using quest, wait until the end.
Cover with foil and bake 20-30 minutes at 350 F or until cheese is melted.
Remove from oven and top with queso, salsa and peppers if you choose.
*** In the picture I used Ricotta because it just happens to be what I had on hand at the moment.
