Ingredients:
2 lbs lean ground turkey breast
1 15 oz can of red kidney beans
1 15 oz can of black beans
2 10 oz cans Rotel tomatoes
1 large onion, diced fine
2 cloves garlic, minced
48 oz chicken broth
1 packet dry ranch dressing mix
1 packet low sodium taco seasoning
Shredded cheddar, for garnish
Fresh cilantro, chopped for garnish
Directions:
In a soup pot over medium heat, combine ground turkey, onion and garlic. Cook until meat is throughly browned. Drain. Add in remaining ingredients (except cheddar and cilantro). Simmer about 45 minutes. Enjoy!
