A light, filling, satisfying wrap that’s perfect for hot summer days
when you don’t want to eat anything too heavy.

Ingredients:
For the marinade:
3 TBSP EVOO
1 TBSP minced garlic
1/3 cup fresh lemon juice
1 TBSP red wine vinegar
1 tsp dried oregano
1 tsp dried dill
1/2 tsp each of: dried basil, dried thyme, dried rosemary and salt
1 TBSP raw sugar
1/4 tsp black pepper
1.5 tsp dijon mustard
For the wrap:
Boneless skinless chicken breast, grilled after marinading
Torilla wraps
Red pepper hummus
Cucumber, cut into thin slices
Feta
Large leafy lettuce
Sun dried tomatoes
Whisk all marinade ingredients together. Place chicken breasts in large ziplock bag, pouring marinade over chicken breasts. Refrigerate for 4-8 hours. (**Pro tip…when freezing chicken, freeze in marinade. You will have the most amazing chicken once you thaw it out and grill!)
Preheat grill to 400 and cook chicken until it reaches 165f internally.
Remove from grill and cover with foil allowing to rest for at least 5 minutes to let it absorb all of the juices.
To prepare wrap:
Smear one tbsp of hummus down center of wrap in a vertical fashion, layer with cucumber, sun dried tomatoes, feta, chicken and lettuce. Tuck in ends and roll into a burrito. Slice in half on a diagonal. Enjoy!
